"body": "AUGUST 17 -- Every August, Malaysians wave the Jalur Gemilang to celebrate Merdeka, a symbol of sovereignty, dignity, and self-determination. We reflect proudly on how far our nation has built its independence. As we march toward Merdeka 2026, a quiet crisis threatens the personal independence of millions, Malaysia is ageing rapidly, and our workforce is entirely unprepared.\n\nBy 2030, over 15 per cent of our population will be aged 60 and above, officially marking Malaysia as an aged nation. DOSM figures show that as of 2024, 11.6 per cent (3.9 million people) had already crossed that threshold. But behind these numbers lies an uncomfortable truth, for most Malaysians, reaching 60 does not mean a peaceful retirement. It means a desperate scramble to survive. In a nation celebrating Kesejahteraan Dinikmati (Shared Prosperity), true prosperity cannot exclude the very builders of our nation.\n\nThe illusion of freedom at 60\n\nWe like to picture retirement as a well-deserved rest. The data tells a grimmer story. Only about 38 per cent of active formal-sector EPF members hit the basic savings target of RM390,000 at age 60, a sum designed to stretch just RM1,625 a month over 20 years. More than six out of ten workers fall below even this modest threshold. For millions, \"retiring\" is a luxury they cannot afford. They will keep working not always by choice, but out of absolute necessity. Some will transition into dignified roles as mentors or consultants. But far too many will be pushed into precarious, unprotected informal labour simply because corporate Malaysia shut the door on them. Merdeka is about dignity. Nevertheless, how much dignity is there for an elder forced into gig work because formal employers treat age 50 like an expiration date?\n\nFour ways employers are failing the age test\n\nThe question is no longer if older Malaysians will work. It is whether our employers are brave enough to rethink how they manage people or what we call sustainable human resource management. If Malaysian workplaces are to reflect Merdeka's values of inclusivity and resilience, employers must fix four major flaws:\n\n1) Age bias in hiring\n\nAdvertisements quietly weed out applicants over 45. Employers falsely assume older workers are inflexible. In reality, research shows older staff bring lower turnover, stronger crisis judgment, and deep institutional memory.\n\n2) Outdated job design\n\nExpecting a 62-year-old to operate like a 32-year-old is poor design, not high performance. Flexible hours, phased retirement, and reduced physical loads allow companies to retain priceless experience while respecting capacity.\n\n3) Selective reskilling\n\nDigitalisation does not stop at 50. Yet training budgets are routinely funnelled exclusively to younger staff under the foolish assumption that training an older worker is a waste. If people work into their late 60s, a 55-year-old's training pays dividends for over a decade.\n\n4) Operationalising wellbeing\n\nChronic health management, ergonomics, and mental health can no longer be brushed off as extra perks. They are fundamental operational necessities for an older workforce.\n\nPolicy must catch up to demographics\n\nThis isn't just a corporate duty, it is a national agenda. Debates over raising the retirement age often devolve into a zero-sum myth: older workers staying vs youth getting hired. Global evidence shows this fear is unfounded older and younger workers complement rather than substitute each other. What Malaysia urgently needs is a nation-building blueprint: employer tax incentives for retaining older talent, portable skill entitlements, and expanded social protections for elderly gig workers.\n\nThe real test of our independence\n\nPopulation ageing isn't a slow-motion disaster. A longer, healthier life expectancy is modern development's greatest triumph. The real disaster will be driven by institutions that refuse to adapt. As we fly the flag this August, we must ask: What does Merdeka mean if our economic system discards citizens the moment they grey? Malaysia will be an aged nation by 2030. The ultimate measure of our national maturity won't just be our GDP or our skyline, it will be whether our workplaces are mature enough to honour, employ, and liberate the people who built this country.\n\n* Dr Annuar Aswan Mohd Noor is a senior lecturer with Universiti Utara Malaysia.",

Ia juga boleh menjadi petunjuk ada yang tidak setuju dengan usul untuk kekal dalam kerajaan,\" katanya dalam kenyataan.\n\nBekas timbalan pengerusi DAP Pulau Pinang itu berkata, kepimpinan parti perlu mempertimbangkan sama ada keputusan kongres berkenaan mencerminkan sentimen majoriti ahli parti.\n\nSeramai 2,223 perwakilan menghadiri kongres khas DAP semalam, dengan 2,099 daripadanya mengundi untuk menentukan parti itu perlu kekal atau menarik diri daripada kerajaan perpaduan.\n\nKira-kira 1,857 perwakilan mengundi untuk kekal dalam kerajaan, manakala baki 242 perwakilan mengundi untuk parti itu meninggalkan kerajaan.\n\nSetiausaha Agung DAP, Loke Siew Fook dilaporkan berkata, kehadiran rendah pada kongres khas itu sebenarnya dianggap tinggi, mengambil kira kehadiran perwakilan ketika pemilihan parti yang lazimnya sekitar 70%.\n\nRamasamy mengkritik Loke meremehkan isu kehadiran rendah dengan berkata ia bukan persidangan biasa kerana perwakilan sepatutnya membuat keputusan besar berhubung hala tuju parti.\n\n\"Kongres pada 16 Ogos bukanlah kongres biasa. Ia sepatutnya menentukan hala tuju politik parti itu susulan prestasi buruknya dalam PRN Sabah, Johor dan Negeri Sembilan.\n\n\"Cara kongres itu digembar-gemburkan beberapa hari sebelum itu menjadikannya saat penentu hidup atau mati bagi DAP. "body": "【食在享受】20年做好一碗砂拉越面 聂文俊\"融合与改良\"打出自己的招牌\n\n从13岁左右开始在亲戚经营的茶室帮忙，踏入餐饮业，到如今经营\"家乡砂捞越面\"逾20年，档口老板聂文俊（38岁）凭著不断改良酱料、调整面条口感，将原本在西马较少人认识的砂拉越面，逐步打造成深受食客欢迎的招牌美食。他说，一路走来最大的动力，不是生意爆红，而是顾客一次又一次的支持与回头。\n\n身为福州人的聂文俊接受访问时表示，自己出身茶室家庭，父母早年贩售杂菜饭、叔叔经营芽菜鸡饭、包点等餐饮生意，他从小就在茶室帮忙，洗碗、卖包、煮面样样都做。因缘际会下，喜爱干盘面的他在中学时期认识了一名开档卖砂拉越面的制面师傅，便开始跟随对方学习手工制面，毕业后正式投入制面及经营档口。\n\n他说，当时师傅教授的是较传统的砂拉越面做法，只有白酱口味，没有黑酱，也没有后来广受欢迎的红酱。由于吉隆坡食客的口味与砂拉越不同，他便将自己接触到的黑酱风味，结合过去累积的经验，不断修改配方。\n\n\"我每次都会问顾客，这个味道可以吗？哪里需要改？一直听他们的意见，再慢慢调整。\"\n\n他指出，当年吉隆坡人普遍偏爱黑酱干捞面，不习惯砂拉越原本较清淡的白酱，因此他花了不少时间研究，让酱料更符合本地人口味，同时保留砂拉越面的特色。\n\n除了黑酱，他后来也受到不少砂拉越食客启发，研发出如今的人气红酱。他透露，不少砂拉越食客返乡后，都会特地带红酱回来给他试吃，让他开始研究其中风味，再结合自己制作叉烧酱的经验，不断调整甜度与香气，最终形成店内独有的红酱配方；此外他也因应年轻人口味，推出麻辣面，又麻又过瘾。\n\n\"宁愿客人等，也不能失水准\"\n\n不过，聂文俊坦言，自己的砂拉越面并非完全照搬原乡做法，而是在保留特色的基础上加以改良，更符合西马市场口味。他笑言，曾有人质疑\"不够正宗\"，但他认为，餐饮本来就需要因地制宜，\"我做的是融合与改良，让更多人可以接受。\"\n\n除了酱料，他对每一碗面的细节同样讲究，包括猪油与葱油的比例、煮面时间、水温控制，以及新鲜的猪油渣，\"猪油渣一定每天现炸，全部都是自己做，不会隔夜！\"\n\n他说，过去猪油比例较高，不少食客吃到最后总会剩下一两口，于是经过无数次调整，终于找到最佳比例，既保留香气，又不会过于油腻。\n\n为了维持品质，他多年来坚持一碗一碗煮面，即使排队人龙再长，也会按照标准更换热水及冰水，不因赶时间而省略任何步骤。\n\n\"不管多少张单，我都要保持同样的水准，宁愿请客人多等一下。\"\n\n然而，随著生意越来越好，庞大的客流量令他的身体逐渐吃不消，因此近年引进定时煮面机，一次可烹煮6碗面，不仅能更精准控制面条熟度，避免煮得过熟或不足，也能在维持口感与品质的同时，大幅提升出餐效率。\n\n他透露，过去全靠手工打面，每批约16至17公斤便需花上45分钟，一天最多要制作近100公斤面条，既耗时又耗力。随著生意增加，他近年开始将部分制面工作交由合作伙伴负责，让供应更加稳定。\n\n目前，\"家乡砂捞越面\"每天可售出约200至300碗，周末更可突破400碗。他指出，近年除了本地食客，也吸引不少砂拉越人，以及来自中国和香港的旅客慕名前来，其中不少人都是透过社交媒体的分享而认识这家档口。\n\n\"曾没人要批发我的面\"\n\n回顾创业历程，聂文俊坦言，最困难的并非制面，而是创业初期向市场推广砂拉越自制面。他曾尝试将面条批发给其他档口，惟不少业者仍倾向售卖云吞面，生意始终未见起色。这段低潮持续近10年，一度令他感到挫折，但他从未想过放弃，最终凭著坚持成功站稳脚步。\n\n谈及创业至今最大的收获，他认为，顾客的肯定就是最大的回报。每当收档时看到食材售罄、听见熟客一句\"老板，你的面很好吃，我下次还会再来\"，又或是看到一个个吃得干干净净的空盘，都让他感到莫大的成就感。\n\n展望未来，他表示，希望继续完善品牌，包括改良叉烧品质，待整体营运完成标准化后，再考虑开设第二间分店。不过，他强调，拓展分店的前提，是建立完善的培训及管理制度，确保每一家店都能维持相同水准，毕竟\"品牌可以复制，但品质不能妥协。\"\n\n对一路支持自己的食客，聂文俊最后也表达感谢。他说，正因为大家愿意排队、愿意一次又一次回来光顾，才让\"家乡砂捞越面\"一路走到今天。\n\n\"我十分感恩顾客们的肯定，正是因为有他们的认可与支持，才有今天的'家乡砂捞越面'。\"\n\n【资料档】\n\n营业时间：7am-2pm\n\n电话：016-3909995\n\n地址：（万泉美食中心）19, Jalan 14/27b, Taman Desa Setapak, 53300 Kuala Lumpur\n\n要看最快最熱資訊，請來Follow我們 《東方日報》WhatsApp Channel.",
